  1. Chicken and Soup
  2. one whole chicken/ clean
  3. two cup veggies like parsnips, cabbage..
  4. 1 tsp salt
  5. 2 tbsp soy sauce
  6. 1/2 tsp black pepper
  7. 1/2 tbsp sesame oil
  8. 2 tbsp oyster sauce
  9. 2 clove garlic
  10. a few coriander origins
  11. 2 0.5 liter drinking water
  12. Rice
  13. 0.5 cup poultry skin, trim from poultry
  14. 1/2 mug jasmine grain
  15. 1 clove ginger
  16. 1 clove garlic
  17. Ginger dipping sauce
  18. twenty fresh very hot chili or less
  19. 4 clove garlic
  20. 1 clove ginger
  21. 0.5 cup fermented soya bean
  22. 1 tbsp fish sauce
  23. 1/2 tbsp brown sugar
  24. 1/2 tbsp sweet soy sauce, or even dark soy sauce
  25. 1 bunch coriander
  26. 1 tbsp lime juice
  1. Clean well chicken with salt ( use extra salt ), rub whole chicken with salt, clean in runny water, trim unwanted fat, save some skin to work on rice.. meanwhile soak rice in water, set aside

  2. On large soup pot add water, bring to boil, add chicken and another ingredients, cover lid, after 5 mins of hot boil.. spoon the bubbles on surface out… reduce to low heat then let it simmer until all are soft, chicken cooked approximately 45 mins

  3. Make dipping sauce, mix everything together by finely chop and mix or use pestle and mortar

  4. Cook rice, choose large sauce pan, set on medium heat, stir in chicken skin with crushed garlic and slices of ginger, stir until chicken turn brown, add soaked rice, stir to mix, reduce to low heat, put stock from soup pot one mug of stock from soup, take away chicken skin, let rice cook gradually, by cover lid, this should become done in 15 mins, open lids and check.. if rice cook warmth off, but still cover lid to make rice more soft

  5. Whole chicken will be ready now, must be tender, may tear apart or chop easily, take through soup pot, let it cool enough to chop as your desire

  6. To serve.. one plate of rice and chicken with small bowl associated with dipping sauce, one bowl of soup, garnish with coriander and extra cucumber
