  1. 6 medium ripe plantain bananas, cut in half lengthwise
  2. 12 thin strips of ripe jackfruit
  3. 12 sheets of spring roll wrappers
  4. 1 cup brown sugar
  5. 2 cup cooking oil
  1. Separate the spring roll wrappers, set up your plates in sequence: sliced banana, sugar, jackfruit.

  2. Lay the wrapper, dip the banana in sugars and put on one end( of the wrapper, lay a slice of jackfruit on top.

  3. Fold starting at the end of the wrapper using the filling, fold the 2 edges in, then roll up to the end. Seal the end with water.

  4. Heat oil in moderate heat and fry the spring move with the sealed end side straight down first (to keep it sealed) plus cook for 5-10 minutes or until slightly browned and flip. Fry the other side, and once slightly browned, spread sugar(1 tablespoon per roll) onto the oil to caramelize and glaze the fried roll. Cook until golden brownish.

  5. Best served while very hot topped with vanilla ice cream.
