Ingredients

  • 1 tablespoon black chia seeds
  • 5 cups Special K original
  • 1/2 cup desiccated coconut, plus 1 teaspoon extra
  • 1/4 cup dried apricots, finely chopped
  • 1/4 cup sultanas
  • 1/4 cup pistachio kernels, finely chopped
  • 1/4 cups coconut oil
  • 1/4 cup honey
  • 1/4 cup almond, brazil and cashew spread
  • 1/4 cup raw cacao powder

Method

  • Step 1

    Grease a 16cm x 26cm slice pan. Line with baking paper, extending paper 2cm above edge on all sides. Place chia seeds and 2 tablespoons water in a small bowl. Stir to combine. Stand for 10 minutes, stirring occasionally, or until water has absorbed and mixture is thick.

  • Step 2

    Meanwhile, place cereal in a large bowl. Using your hands, lightly crush. Add coconut, apricot, sultanas and 2 tablespoons pistachios. Stir to combine.

  • Step 3

    Place coconut oil, honey, spread and cacao in a small saucepan over low heat. Cook, stirring, for 3 to 4 minutes or until melted and smooth. Bring to a simmer. Remove from heat. Add to cereal mixture with chia seed mixture. Stir well to combine. Spoon mixture into prepared pan, pressing down with the back of a spoon to level. Sprinkle over remaining pistachios and extra coconut. Cover. Refrigerate for 4 hours or until set.

  • Step 4

    Remove slice from pan. Cut into squares. Serve.
