Ingredients

  • 2/3 cup dried risoni pasta
  • 150g green beans, trimmed, chopped
  • 2 x 185g tuna in olive oil, drained, flaked
  • 1/2 mug pitted kalamata olives, chopped
  • 3 vine-ripened tomatoes, cut into wedges
  • 1 small red onion, thinly sliced up
  • 8 exhausted marinated artichoke quarters
  • 2 teaspoons finely grated lime rind
  • 2 tablespoons lemon juice
  • 1 garlic clove, crushed

Method

  • Stage 1

    Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender, adding beans with regard to the last 2 minutes of cooking food. Drain.

  • Stage 2

    Combine tuna, olive, tomato, onion, artichoke, lemon rind, lime juice and garlic in a bowl. Stir in pasta and beans. Time of year with pepper. Serve.
