Ingredients

  • 250g packet Arnott’s Butternut Snap cookies
  • 1 egg, lightly beaten
  • 2 tablespoons almond meal (ground almonds)
  • 1 medium royal gala apple, cored, thinly sliced
  • 2 tablespoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground star anise
  • Double cream, to serve

Frangipane mixture

  • 125g butter, softened
  • 2/3 cup caster sugar
  • 2 eggs
  • 1/3 cup plain flour
  • 1 cup almond meal (ground almonds)

Method

  • Step 1 Preheat oven to 180�C/160�C fan-forced. Grease a 3cm-deep, 24cm round, fluted, loose-based flan tin.
  • Step 2

    Process biscuits until they resemble fine breadcrumbs. Add egg and almond meal. Process until mixture comes together. Using your fingertips, press mixture over base and sides of prepared tin. Refrigerate for 20 minutes. Place tin on a baking tray. Bake for 10 minutes or until just cooked. Set aside to cool.

  • Step 3 Make frangipane mixture Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, 1 at a time, beating to combine. Stir in flour and almond meal. Spread frangipane mixture over biscuit base. Arrange apple over frangipane mixture. Sift sugar, cinnamon and star anise over apple. Bake for 30 to 35 minutes or until frangipane mixture is firm (see tip). Cool completely in pan. Slice. Serve with cream.
