Ingredients

  • 2kg corned beef silverside
  • 1 large brown onion, roughly chopped
  • 1 celery stalk, roughly chopped
  • 1 large carrot, roughly chopped
  • 2 dried bay leaves
  • 1/2 teaspoon whole black peppercorns
  • Steamed combined vegetables, to serve
  • Warm English mustard, to function

Parsley sauce

  • 75g butter
  • 0.25 cup simple flour
  • 2 teaspoons mustard powder
  • 3 cups dairy
  • 1/4 mug finely chopped fresh flat-leaf parsley leaves

Method

  • Step 1 Place beef in a large saucepan. Cover with cold water. Add onion, celery, carrot, bay leaves and peppercorns. Cover. Provide for the boil over medium-high heat.
  • Stage 2

    Reduce warmth to low. Simmer, partially covered, regarding 2 hours or until beef is usually tender. Remove from heat.

  • Stage 3

    Make sauce: Melt butter inside a saucepan over medium warmth. Add flour and mustard powder. Cook, stirring, regarding 1 minute or until bubbling. Remove from heat. Gradually stir in dairy. Return to heat. Cook, stirring, regarding three or four minutes or until combination boils and thickens. Remove from warmth. Stir in parsley.

  • Step 4 Remove beef from pot. Dispose of liquid, onion, celery, carrot, bay leaves and peppercorns. Slice beef. Assist with parsley sauce, steamed vegetables and mustard.
