Ingredients

  • 2 egg whites
  • 110g (1/2 cup) caster sugar
  • 125g (1/2 cup) light sour cream (Pauls brand)
  • 1 tablespoon icing sugar mixture
  • 1 teaspoon vanilla essence
  • 250g (1 punnet) strawberries, washed, hulled, halved

Method

  • Step 1

    Preheat oven to 140�C. Line a baking tray with non-stick baking paper.

  • Step 2

    Place the egg whites in a large, clean, dry bowl. Use an electric beater to whisk the egg whites until soft peaks form.

  • Step 3

    Gradually add caster sugar and whisk until sugar dissolves. Continue beating for 2 minutes or until mixture is thick and glossy and a long trailing peak forms when beaters are lifted.

  • Step 4 Spoon meringue mixture onto the tray to form six equal-sized pavlovas. Use the back of a spoon to make a shallow indent in the top of each pavlova. Bake for 40 minutes or until crisp. Remove from oven and set aside for 30 minutes to cool.
  • Step 5 Combine the sour cream, icing sugar and vanilla essence in a small bowl.
  • Step 6 Place pavlovas on serving plates. Add a dollop of sour cream mixture and top with strawberries. Serve immediately.
