Ingredients

  • 12 slices prosciutto, rind removed
  • 3 pontiac potatoes, peeled, halved
  • 1kg ricotta
  • 2 eggs
  • Quartered, roasted tomato vegetables, to serve
  • Rosemary sprigs, to ornament

Method

  • Step 1 Preheat stove to 180�C. Grease a 30 times 10cm loaf pan and line with overlapping slices of prosciutto.
  • Step 2 Simmer potatoes in salted water with regard to 6 moments or until just smooth. Drain and place aside to cool. Grate potato on a course grater and place in a bowl with ricotta, ovum, 1 teaspoon of salt and 2 teaspoons of black pepper, and blend well. Place mixture in lined pan, cover with overlapping bits of prosciutto and bake with regard to 20 minutes. Remove from oven and allow to cool with regard to 10 moments. Turn out, cut in to thick slices and serve with roasted tomatoes. Garnish with rosemary.
