Recipes Glazed Sweet Potatoes with Ginger and Allspice

  1. 900 g sweet potatoes
  2. 50 g butter
  3. 3 tablespoons oil
  4. 2 garlic cloves crushed
  5. 2 pieces route ginger finely chopped
  6. 2 teaspoons ground allspice
  7. 2 tablespoons syrup from the ginger jar
  8. to taste salt and cayenne pepper
  9. 2 tablespoons chopped fresh thyme and some sprigs to garnish
  1. Peel the sweet potatoes and cut into 1 cm cubes

  2. Melt the butter with the oil in a large frying pan and add the sweet potato cubes, then fry stirring frequently for about 10 minutes until they are just soft

  3. Stir in the garlic, ginger and allspice

  4. Cook stirring constantly the 5 to 7 minutes

  5. Stir in the ginger syrup, salt and a generous pinch of cayenne pepper and the fresh thyme

  6. Stir for 2 minutes more then serve scattered with thyme sprigs
