Ingredients

  • four Coles Foreign Beef Eye Fillet Meats
  • 1 tea spoon olive essential oil
  • 1 garlic herb clove, crushed
  • 1/4 seedless watermelon (about 500g), rind removed, thinly sliced
  • 100g watercress, sprigs selected
  • one cup great leaves
  • one small red onion, very finely sliced
  • 200g marinated fetta, cut into cubes, dressing reserved

Method

  • Phase 1

    Heat the barbecue grill or even chargrill on medium-high. Coat beef within oil and garlic herb and season properly. Cook for 3 or more mins each aspect or until prepared for your preference. Transfer to a dish. Cover with foil and set apart for five mins to rest.

  • Step 2

    Meanwhile, prepare watermelon on barbeque grill for 1-2 mins every aspect or until lightly charred.

  • Step 3

    Arrange watermelon, watercress, mint, onion and fetta upon serving plates. Thinly slice beef and add to salad. Drizzle with two tablespoons of reserved fetta marinade. Period. Serve immediately.
