Recipes Vickys Creamy Chicken One-Pot, GF DF EF SF NF

  1. 4 skinless, boneless chicken breasts
  2. 2 tbsp oil
  3. 8 slice bacon, chopped
  4. 600 ml vegetable stock
  5. 360 grams baby potatoes, halved
  6. 200 grams baby broad (fava) beans
  7. 200 grams sweetcorn
  8. 200 grams cherry tomatoes, halved
  9. 200 grams cream cheese* – see my free-from recipe
  10. Seasoned Flour Recipe
  11. 120 grams gluten-free / plain flour
  12. 2 tbsp paprika
  13. 1/2 tbsp black pepper
  14. 1/2 tbsp celery salt
  15. 1/2 tbsp mustard powder
  16. 1 tsp garlic salt
  17. 1/2 tsp ginger
  18. 1/4 tsp oregano
  19. 1/4 tsp basil
  20. 1/4 tsp thyme
  21. 1/4 tsp salt
  1. My recipe above with regard to seasoned flour makes more compared with how you’re looking for here but it’s excellent for frying wings etc therefore I keep a large container associated with it in my cupboard at all times

  2. Toss the poultry in the flour then brownish off in a pan with the oil over a medium heat

  3. Remove the chicken and fry off the bacon in the pan until crisp then put the chicken back in

  4. Add the stock and simmer for ten minutes

  5. Add in the potatoes and simmer covered with regard to a further 20 minutes

  6. Stir in the beans, sweetcorn and tomatoes. Simmer discovered for any final 5 minutes

  7. Remove the chicken and dish up. Stir the cream parmesan cheese into the pan of veg to dissolve and serve instantly with the chicken. *You may also use full fat tinned coconut milk or free-from yogurt in place of cream parmesan cheese but I find the regularity of cream cheese is ideal.
