Ingredients

  • 315g (1/2 cups) caster sugar
  • 160ml (2/3 cup) hot water
  • 160ml (2/3 cup) cold water
  • 2 tablespoons gelatine powder
  • 1 teaspoon vanilla bean paste
  • 200g pkt Milk Cooking Chocolate, melted
  • 145g (1 cup) hazelnuts, roasted, finely chopped
  • Hot mocha, to serve (see note)

Method

  • Step 1

    Stir the sugar and hot water in a saucepan over medium heat for 3 minutes or until the sugar dissolves.

  • Step 2 Use a fork to whisk cold water and gelatine in a jug until combined. Stir gelatine mixture into sugar syrup for 2-3 minutes or until gelatine dissolves. Pour into a bowl. Cool for 30 minutes.
  • Step 3 Use electric beaters to beat sugar mixture for 6-10 minutes or until very thick. Add vanilla and beat for 1 minute or until combined. Spread into a lined 3cm-deep, 16. 5 x 26cm (base measurement) slice pan. Smooth the surface. Set aside, at room temperature, for 1 hour or until set.
  • Step 4 Use a wet knife to cut marshmallow into 24 squares and place on a tray lined with baking paper. Drizzle each marshmallow with melted chocolate. Sprinkle with hazelnut. Cool for 30 minutes or until the chocolate is set. Serve with hot mocha.
