Ingredients

  • 150g (1 cup) plain flour
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 40g butter
  • 25g (1/3 cup) grated cheddar
  • 1 tablespoon dried chives
  • 60ml (1/4 cup) cold water
  • Plain flour, to dust
  • 2 teaspoons milk, to brush

Method

  • Step 1

    Preheat oven to 200�C. Line a baking tray with non-stick baking paper. Sift together flour, baking powder and salt into a large bowl. Use fingers to rub in butter until mixture resembles fine breadcrumbs.

  • Step 2 Add cheddar and chives, and stir to combine. Make a well in the centre. Add water and use a round-bladed knife in a cutting motion to bring mixture together. Knead in the bowl until just smooth. Wrap in plastic wrap and set aside for 15 minutes to rest.
  • Step 3 Use a rolling pin lightly dusted in flour to roll out dough on a lightly floured surface until 2mm thick. Use a 5cm star-shaped pastry cutter (or a knife) to cut out shapes from dough. Brush with milk and place on prepared tray.
  • Step 4 Bake in preheated oven for 10 minutes or until lightly golden. Remove from oven and set aside on tray for 30 minutes to cool completely.
