Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 2 teaspoons olive oil
  • 1 medium red capsicum, thinly sliced
  • 1 medium zucchini, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 80g packet pistachio kernels
  • 2 teaspoons sesame seeds
  • 1/2 cup stuffed green olives, halved
  • 2 tablespoons honey, warmed

Method

  • Step 1

    Place couscous in a heatproof bowl. Add boiling water. Cover. Set aside for 5 minutes or until liquid has absorbed. Using a fork, fluff couscous to separate grains. Heat oil in a frying pan over medium-high heat. Add capsicum, zucchini and onion. Cook, stirring, for 3 to 4 minutes or until vegetables are tender. Add pistachios and sesame seeds. Cook, stirring, for 2 minutes or until sesame seeds are golden.

    Add vegetable mixture and olives to couscous. Pour over honey. Season with salt and pepper. Toss to combine. Serve.
