Recipes Vickys Spiced Aubergine Soup, GF DF EF SF NF

  1. 2 medium aubergine/eggplant, diced
  2. 1 onion, chopped
  3. 1 clove garlic, finely chopped
  4. 1 tbsp moderate strength curry powder*
  5. 200 grams carrots, diced
  6. 400 grams can of chopped tomatoes
  7. 850 ml veggie stock
  8. 1 salt and freshly ground spice up to taste
  9. 1 fresh coriander to garnish
  10. Medium Curry Powder*
  11. 2 1/2 tbsp coriander seeds
  12. 2 1/2 tbsp cumin seeds
  13. 1 tbsp fennel seeds
  14. 2 inch cinnamon stick
  15. 1 tsp cloves
  16. 3 bay leaves
  17. 0.5 tbsp paprika
  18. 2 tsp floor turmeric
  19. 1 tsp chilli powder
  20. one tbsp garam masala

  1. To make the curry powder, dry fry the coriander, cumin and fennel in a new pan for a minute till you can smell their scent, then take off the temperature and let great

  2. Mix the toasted seeds together with the other ingredients within an espresso grinder or use a pestle
