Recipes Quick Cherry Cheesecake Bites

  1. 2 mug Pretzels
  2. 1 cup Unsalted Butter (melted)
  3. 16 ounces Light Cream Cheese
  4. just one cup Water (boiling)
  5. just one envelope Gelatin
  6. 3/4 mug Granulated Sugar
  7. 1/2 Lemon (juiced)
  8. 1 Lemon (zested)
  9. 21 oz Cherry Pie Filling

Recipes Quick Cherry Cheesecake Bites

  1. Preheat oven to 350°F.

  2. In a food processor, pulse 2 cups of pretzels three to four times until a rough chop is achieved. You want a mixture of crumbs and chunks.

  3. Stir melted butter into pretzels until mixed thoroughly. Spoon equally into cupcake tray with cupcake liners in it. Fill each about halfway and place in oven for 15 minutes.

  4. While pretzel crusts bake, stir gelatin, sugar, lemon juice, and lemon zest together until sugar is completely dissolved. With a mixer or beaters, mix in cream cheese until smooth.

  5. When pretzel crusts are done, spoon the cream cheese mixture equally into the cups and place in the refrigerator.

  6. Let chill in the refrigerator for at least an hour. Remove and top equally with spoonfuls of cherry pie filling and serve.
