  1. 100-120 grams sugar (1/2 cup)
  2. 8 tbsp cornflour/starch or arrowroot powder
  3. 480 ml grain milk or light coconut milk (2 cups)
  4. 240 ml full fat coconut milk (1 cup)
  5. 1 small over ripe pureed banana (spotted skin)
  6. 2 tsp vanilla extract
  7. 3-4 drops orange or yellowish food colouring

  1. Mix the sugar plus cornflour in a bowl along with some from the milk to create a watery paste

  2. Heat the rest of the milk inside a pan, simmer, in that case pour in the starch/sugar/milk blend and bring to the steam

  3. Get off the heat and stir in the banana, vanilla and colouring

  4. Pour into the glass dish until cooled, in that case refrigerate until set

  5. For a coating pudding, place some vegan vanilla cookies on the bottom from the dish, cover with a coating of sliced banana then best with half of the pudding mixture. Replicate the cookie, banana, pudding layers and refrigerate until set. Quantities are around 150g cookies plus 2 medium bananas
