Recipes Shrimp Scampi with Zucchini Noodles

  1. SHRIMP AND ZUCCHINI
  2. 1 lb medium raw shrimp, peeled plus deveined
  3. 3 medium zucchini, ends removed and cut into slim strips to resemble spaghetti
  4. 1/2 tbsp cajun seasoning
  5. 1/2 tbsp olive oil
  6. 1/2 tbsp butter, salted or unsalted
  7. SAUCE
  8. 1 Shallot, sliced
  9. 3 garlic herb cloves, minced
  10. 2 tbsp dry white wine
  11. 1/2 cup low sodium chicken broth
  12. one tbsp fresh lemon fruit juice
  13. 1/4 tsp red spice up flakes
  14. 1 tsp sizzling sauce, such as Franks brand
  15. .25 tsp black pepper plus salt to taste
  16. 1 tbsp heavy cream
  17. ORNAMENT
  18. 2 tbsp fresh grayed romano cheese, plus more for offering
  19. 2 tbsp chopped clean parsley

Recipes Shrimp Scampi with Zucchini Noodles

  1. Season shrimp with cajun seasoning

  2. Heat olive oil and butter in a large skillet. Add shrimp and cook until. pink and cooked through, about 3 minutes on each side. Remove to a plate and cover to keep warm

  3. Add shallot and garlic to the same skillet the shrimp was cooked in and cook 1 minute just to soften. Add wine and cook until almost gone

  4. Add broth, lemon juice, red pepper flakes, hot sauce, cream, black pepper and salt to taste. Bring to a simmer

  5. Add zucchini, tossing to coat with sauce and cook until just tender about 2 minutes

  6. Turn out onto serving platter, sprinkle with romano cheese, top with shrimp and parsley. Add more romano cheese when serving

  7. Note, The zucchini can be cut by knife. I use a simple tool that when you put the zucchini in and twist the noodles come out. I got it at the grocery store. I picture it below
