Recipes Quinoa “Fried Rice”

  1. 1 cup quinoa rinsed and drained
  2. 1 zucchini, diced
  3. 1/2 cup sliced mushrooms
  4. 3/4 cup frozen veggie mix (corn, peas, carrots etc)
  5. 2 eggs
  6. 2 tbsp soya sauce
  7. 1/2 tsp fish sauce (optional)
  8. chopped parsley (optional)
  9. 1 tsp olive oil, extra virgin
  10. 1 small onion, diced small
  11. 2 garlic cloves, minced
  12. salt and pepper

Recipes Quinoa “Fried Rice”

  1. In a pot, cook quinoa intended for about 15-20 min or until prepared and add the frozen veggies within the last 5 min of cooking food time and set aside.

  2. While quinoa is cooking, heat the non stick pan and cook ovum (scrambled) remove from pan make apart

  3. Add oil to griddle and cook garlic and onions till translucent.

  4. Add your mushrooms to the pan, cook for one more 3 min.

  5. Then include your zucchini, and stir fry one more 3 min (I like my zucchini still crisp so I don’t generally cook it for long, but a person can cook longer if you’d like)

  6. Add your cooked quinoa and mixed veggies to the skillet, mix.. Then add the scrambled ovum to the pan.

  7. Add your own soya sauce, fish sauce (if using) and salt and pepper to flavor. Mix all together. Let sit intended for 5 min for everything to associate then serve

  8. Spread with parsley to garnish (optional)
