Recipes Sig’s Mixed Onion and Tomato Soup

  1. 3 small to medium white onions
  2. 3 small to medium red onions
  3. 3 large shallots
  4. 6 small salad potatoes in their skins
  5. 1/2 tbsp unsalted butter
  6. 1/2 tbsp olive oil
  7. 1/2 tsp all purpose seasoning or to liking
  8. 2 tsp German mild mustard or 1 teaspoon Dijon mustard
  9. 1 pinch herbs each like parsley, coriander, dill, chervil or others to personal preference ( optional)
  10. 1 liter vegetable stock or a little less or more depending on preference
  11. 125 ml passata (Italian style tomato juice)
  12. 2 tbsp of best tomato puree
  13. 250 grams marinated tofu or 2 German style sausages (bratwurst)very thinly sliced, or perhaps little, mini sausage meatballs
  14. 1 little Chili flakes
  15. 1 little salt (optional)
  16. 1 little chives for garnish
  17. 6th tbsp fresh cream or perhaps double cream for garnish ( optional)

  1. First peel all the onions and wash the potatoes

  2. Mince the onions on a blender or hand chop these people very finely, chop your unpeeled carrots into small cubes

  3. Sauté the onions and the potatoes for about ten short minutes or so in the butter and olive oil, add all the seasonings and half of the stock, simmer for about 15 minutes, be certain that that not burns. add a little even more stock if needed.

  4. Next puree the soups until it is smoother, add like little or as much of other stock until preferred thickness is obtained. Puree again until it is steady as you may like it

  5. Add the passata, tomato puree and chilli flakes, season having salt if needed.

  6. Sauté the tofu or fry the meat or little mini sausage meatballs throughout a little oil. If using typically the sausages slice them very thinly, drop any of them over the soups prior to serving. Add some chives to get garnish.
