Recipes Brenda’s Stuffed Shells

  1. 12 oz box jumbo shells
  2. 1 lb mild Italian sausage links
  3. 1 small pkg frozen chopped spinach
  4. 1 medium onion, chopped
  5. 5 clove garlic, minced
  6. 1 lb sliced mushrooms
  7. 2 cup mozzarella, Monterrey jack or provolone, grated
  8. 1/4 cup parmesan or fontina more for topping
  9. 2 eggs
  10. 2 jars Alfredo sauce
  11. 15 oz ricotta
  12. 1/2 tbsp Italian seasonings

Recipes Brenda’s Stuffed Shells

  1. Preheat oven to 350°F

  2. Boil noodles to al-dente, drain together with cool till easy to handle.

  3. Brown sausage, then saute onions, mushrooms, and garlic till soft. Blend in seasoning.

  4. Whisk ova, blend ricotta. Stir in cheeses together with spinach. Mix in cooled sausage, red onion mixture.

  5. Stuff the covers with mixture and place in making cookies dish with 2 cups of Alfredo sauce in bottom of dish.

  6. Cover with remaining sauce together with sprinkle with more grated cheese
