Recipes Fried aubergines

  1. 1 medium aubergine
  2. 1 egg
  3. 1 few slices of serrano ham (optional)
  4. 3 tbsp flour
  5. salt
  6. olive oil

Recipes Fried aubergines

  1. Slice the aubergine (about 1 cm thick)

  2. Beat the egg cell put in a couple of pinches of salt and set aside in a bowl

  3. Put the flour on a large plate

  4. Warmth the oil in a frying pan over a medium heat

  5. Get each aubergine slice and dip in the egg then the flour

  6. Fry immediately for about a few – 5 mins turning once whenever the slices have turned golden brown on each side remove from the frying pan and drain off extra oil by placing them on kitchen paper on a plate before serving

  7. Tips and Ideas:

  8. In the Basque Country the aubergine slices are eaten as pinchos placed on small pieces of crusty white bread often with a piece of serrano ham on top secured in place by a cocktail stick
