  3. 70 grams cornstarch
  4. 2 tbsp sugar (if making special pastry)
  5. 1 tsp xanthan gum
  6. 225 grams sunflower spread/butter or hard vegetable fat
  7. 5 tbsp iced water or perhaps as much as required
