Recipes Sig’s Winter Soup From Caucasus Kafkas Çorbasi

  1. 1 smaller celeriac, peeled and sliced roughly
  2. 2 small turnips, peeled and chopped roughly
  3. 1 significant carrot, peeled and sliced roughly
  4. 4 leafs light or green cabbage, chopped
  5. 1 onion chopped roughly
  6. 3 tbsp butter
  7. 1 liter vegetable or meat stock
  8. 3 or more egg yolk
  9. 1 little each salt and tear gas
  10. 1 pinch cayenne tear gas
  11. 1 tsp paprika
  12. 58 grams fine noodles to get soup

  1. Peel and chop all vegetables roughly. Melt the butter in pan add onions, cook until soft, add rest of vegetables and cook for three minutes. Add the stock and gently cook for 15 minutes add noodles just towards the end so they don’t get soggy. Mix the egg yolk with a little water. Take the soup of the heat and when it has stopped bubbling stir in the egg yolk. Season with salt, pepper, paprika and a little cayenne pepper for extra heat.
