Recipes Swordfish in saffron sauce

  1. 1/2 kg swordfish slices or fillets
  2. salt
  3. 1 lemon
  4. 1 slice associated with bread (without crusts)
  5. 2 cloves garlic
  6. 4 tbsp olive oil
  7. 1 little onion
  8. 1/2 tsp saffron
  9. 1 tbsp fresh parsley
  10. 1 large pinch associated with cumin
  11. 1 small cup of white wine

Recipes Swordfish in saffron sauce

  1. Salt the pieces of fish and squeeze a little fresh lemon over them and set aside

  2. Heat the olive oil in a frying pan and fry the bread and garlic until golden – remove from the pan and set aside – it´s better to do this slowly over a method to low heat

  3. Add the chopped onion to the oil and fry for a few minutes until softened

  4. Place the bread, garlic, oil from the pan and onion together with the saffron, parsley, cummin and wine in a blender and mix until you get a smooth sauce

  5. Arrange the fish in the frying pan then pour the sauce into the pan and cook over a medium heat untill the sauce begins to simmer then cover and cook for a further 10 mins – add a little water if the sauce gets too thick

  6. Check that the fish is ready then garnish with the fresh chopped parsley and serve with fresh lemon slices
