Recipes Sig’s herb stuffed potatoes

  1. 16 medium unpeeled potatoes
  2. 2 anchovies
  3. 1 bunch each basil and flat parsley
  4. 1 large clove garlic
  5. 1 tbsp olive oil
  6. 1 good pinch salt

Recipes Sig’s herb stuffed potatoes

  1. Preheat oven to 180C. Boil potatoes unpeeled until cooked.

  2. Set aside to slightly cool

  3. Cut potatoes about a third lengthways and scoop out a well in bigger part. In food processor blend all other ingredients and the scooped out potatoes to a paste.

  4. Fill the paste into wells add the smaller third on top to make a lid, tie together with chives.

  5. Bake in oven until heated through.

  6. Serve with drizzles of more olive oil or melted butter
