Recipes Honey, Almond & Quinoa Crusted Salmon

  1. 1 lb fresh salmon, skin about (wild caught when possible)
  2. 2 3 tablespoons dijon mustard
  3. .25 cup chopped up almonds
  4. .25 cup grilled quinoa
  5. a couple of 3 tablespoons honey

Recipes Honey, Almond & Quinoa Crusted Salmon

  1. Preheat oven to 400°F.

  2. Place salmon skin side down inside a baking dish and pat dry with a paper towel.

  3. Spoon mustard onto salmon and spread until flesh is almost completely covered.

  4. In a small bowl, combine almonds, quinoa and honey. Stir to form a sticky mixture.

  5. Cover mustard-covered salmon with almond-quinoa crust.

  6. Bake on center rack for 20 – 25 minutes, until salmon flakes very easily with a fork.

  7. Remove and let sit for 2 – a few minutes. Serve along with a new garden salad and her quinoa mushroom risotto.
