Ingredients

  • 150g unsalted butter, softened
  • 1 cup caster sugar
  • 1 egg
  • 2 cups simple flour
  • 1 teaspoon baking powder
  • 1 tablespoon poppyseeds
  • 1 tablespoon finely grated lemon rind
  • 1 tablespoon ” lemon ” juice
  • icing sugar mixture, to function

Method

  • Stage 1

    Preheat oven to 180�C/160�C fan-forced. Line 3 baking racks with baking paper. Using an electric mixing machine, beat butter and sugar until light and creamy. Add egg. Beat to combine.

  • Step 2 Sift flour and baking powder over butter mixture. Add poppyseeds, lemon rind and lemon juice. Stir to combine. Roll level tablespoons of mixture into golf balls. Place balls, 5cm apart, on prepared racks.
  • Stage three or more Bake, one tray at a time, for 12 to 15 minutes or until light golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely. Dust with icing sugar. Serve.
