Recipes Apricot tart

Recipes Apricot tart Made out of seasonal apricots and frangipane, this traditional dessert tart is an all-round champion! Apricot tart


  • 100g blanched almonds
  • 100g plain flour
  • 150g caster sugar, plus extra 4 tablespoons to sprinkle
  • 100g unsalted butter
  • 4 eggs
  • 1kg ripe apricots
  • 50g flaked almonds
  • Icing sugar, to dust


  • 250g plain flour
  • 110g icing sugar
  • 110g unsalted butter, chilled, slice into small pieces
  • 1 egg


  • Step 1 To make the pastry, place the flour and icing sugars inside a food processor and mix regarding a few mere seconds to combine. Add butter and process until the mixture resembles good breadcrumbs. Add the egg and carry on processing until the mixture comes collectively to form a smooth ball. Wrap in plastic material wrap and refrigerate regarding 30 minutes.
  • Step two Roll pastry out on a lightly floured workbench and use to line a 24cm loose-bottomed tart pan. Refrigerate regarding 30 minutes.
  • Step 3

    Place almonds in a foods processor and mix to a great meal. Add the flour, sugar, butter and eggs and process until creamy. Refrigerate almond mixture (it is called a frangipane) until you are ready to use.

  • Stage 4

    Halve the apricots and eliminate and discard the stones, then place on a tray and sprinkle with extra 4 tablespoons of sugar. Collection aside for 30 moments to macerate.

  • Step 5 Preheat the oven to 180�C.
  • Stage 6 Place frangipane in the tart shell. Protect with apricots, cut-side straight down, and bake for 30 minutes. Sprinkle top of tart with flaked almonds, return to the oven for 30 minutes, then arranged aside to cool. Dust with icing sugars before serving.
