Recipes Spiced peach muffins A light, moist muffin with the sweetness of peaches and a nutty, crumble topping. Spiced peach muffins


  • 1 3/4 cups plain flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup brown sugar
  • 60g butter, melted, cooled
  • 1/3 cup buttermilk
  • 2 eggs, lightly whisked
  • 200g can peaches in juice, drained, diced

Pecan crumble

  • 30g butter, chopped
  • 1/4 cup plain flour, sifted
  • 1/3 cup pecan nuts, finely chopped
  • 1 tablespoon brown sugar


  • Step 1

    Preheat oven to 200�C. Line a 12-hole 1/3-cup capacity muffin pan with paper cases.

  • Step 2 Make pecan crumble Place butter and flour in a food processor. Process until mixture resembles breadcrumbs. Stir in pecans and sugar. Cover and refrigerate.
  • Step 3 Sift flour, baking powder, cinnamon and nutmeg into a bowl. Stir in sugar. Make a well in the centre.
  • Step 4 Whisk butter, buttermilk and egg in a jug. Pour into well. Add peach and gently fold until just combined. Two-thirds fill muffin cases with mixture. Sprinkle pecan crumble over muffins. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand muffins in pan for 5 minutes. Lift onto a wire rack. Serve warm.
