  1. 2 large pork fillets or some small ones
  2. 50 g serrano ham or bacon
  3. 2 tbsp olive oil
  4. 1 large onion
  5. 100 ml dry sherry
  6. 1 tsp thyme
  7. 6 cloves garlic

  1. Heat the oil in a strong-based frying pan then add the fillets and brown on both sides. Try out to turn them over just as soon as when they are browning. This allows to secure their flavor.

  2. Roughly chop the onion and fresco ham, peel the garlic cloves next add to the pan together with the sherry and thyme.

  3. Cook over a medium heat mixing the mixture occasionally until the various meats is done (approx 30 mins)
