Recipes Pork Chops and Scalloped Potatos

  1. 4 center cut pork chops
  2. 6 medium red potatos
  3. one large onion, sliced
  4. four clove of garlic, minced
  5. 2 1/2 cup pork broth or 1/4 cup chicken broth and 1/4 cup beef broth
  6. 1 cup heavy cream
  7. 3 tbsp butter
  8. 3 tbsp flour
  9. 2 tbsp white wine
  10. 1/2 tsp cajun seasoning
  11. 1/4 tsp black pepper and salt to flavor
  12. 1 tsp thyme
  13. one tsp hot sauce like franks brand
  14. 1/4 cup grated parmesan cheese
  15. 4 chopped green onions

Recipes Pork Chops and Scalloped Potatos

  1. In a large saucepan cover potatos with salted water, bring to a boil and cook until tender but still firm. Cool, peel and slice 1/4 inche thick.

  2. In the mean time make sauce. Melt butter in saucepan add onion and garlic and just soften, add flour and stir nicely for 2 minutes, it is going to seem dry, thats fine, add wine, cook 1 minute, slowly whisk in broth whisk until smooth add cream and seasonings. Cook to a boil and until slightly thickened, add cheese, remove from heat.

  3. Heat a film of oil in a large skillet, time of year pork chops, I used cajun spices, sear and brown pork chops on both sides, remove to a plate.

  4. TO ASSEMBLE AND COOK

  5. Spray a casserole dish with non stick spray. Put some sauce in pan, layer potatoes and sauce top with pork chops sprinkle chops with more cheese if desired and green onions, cover and cook in 400 for about 30 to 40 minutes depending on thickness of pork chops. Do not overcook.
