Ingredients

  • 1 tablespoon olive oil
  • 1 capsicum, seeded, thinly sliced up
  • 3 cloves garlic, halved
  • 4 long reddish chillies, half seeded, cut
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) white colored wine vinegar
  • Slices of pecorino, to serve

Method

  • Step 1 Warmth oil in a small saucepan over medium heating. Add capsicum and cook, stirring, regarding 8 minutes or until soft. In the mean time, process garlic, chillies, sugar and vinegar in a meals processor until finely chopped. Add to capsicum mixture and cook for 18 minutes or until mixture is jammy. Cool, then function with slices of pecorino.
