Recipes Sig’s Asparagus Salad

  1. 12 asparagus spears, trimmed
  2. 2 clove smoked garlic thinly sliced up
  3. 1/2 lemon, juiced
  4. 2-3 tablespoon olive oil in order to serve
  5. two tbsp Parmesan shavings
  6. one good few crumbled Gorgonzola
  7. 4 handful mixed rocket and kale leaves

Recipes Sig’s Asparagus Salad

  1. Heat oil in pan, add asparagus, cook brisk for about 3 moments, add garlic, salt and pepper

  2. Saute until asparagus starts to caramelize and gets tender. (about ten minutes), towards the very end scatter with the crumbled Gorgonzola, so that it starts to melt.

  3. Arrange a handful of rocket and spinach leaves on serving plate

  4. Arrange the asparagus on top, drizzle with the extra oil and lemon juice, scatter over the Parmesan.
