  1. 200 grms cous (you can purchase corn cous if required)
  2. 200 grms soft dried apricots, cut
  3. 1/2 cucumber, peeled, deseeded and chopped
  4. 1/2 yellowish pepper, deseeded and diced
  5. 1/2 green pepper, deseeded and diced
  6. 6 cherry or child plum tomatoes, halved
  7. 70 grams sundried tomatoes, chopped
  8. 70 grms sultanas
  9. 1 tbsp lemon-infused oil

    1. In a bowl, put 350ml of boiling water to be able to the cous, cover with clingfilm and let stand for all-around 5 minutes until the normal water has been totally absorbed

    2. Transfer in a serving pan, fluff the couscous up using a fork, pour above the petrol and season
