Recipes Sig’s Raisin and chocolate chip cake

  1. 300 grams raisins
  2. 150 grams currants
  3. 1 cup dark rum
  4. 250 grams butter
  5. 200 grams sugar
  6. 1 tsp grated lemon rind
  7. 1 tsp cinnamon
  8. 1 large pinch nutmeg
  9. 80 grams chopped almonds
  10. 750 grams plain four
  11. 2 packages ( sachet )baking powder
  12. 1/2 liter milk
  13. 75 grams chocolate chip
  14. 6 egg
  15. 1 stick butter or fat for greasing tin
  16. 1 small amount of icing sugar for dusting

  1. mix just about all ingredients until dough will become slightly foamy.

  2. preheat oven to 220C, grease the tin, put mixture to funnel cake tin or similar making cookies tin with hole inside middle and bake for around one hour, or right up until a skewer inserted will come away clean. Dust together with icing sugar when chilled.
