  1. 1 pork roast ( I used a Boston butt)
  2. 1 hickory chunks

Recipes Smoked pork roast

  1. Soak some of the Hickory pieces in water for a couple of hours. Place some dry Hickory pieces in a smoker or barbecue within the bottom and start burning.

  2. To control flame add some of the water soaked Hickory chunks to the dry chunks. Place your Boston bottom or roast of your choice on the top rack of your smoker

  3. Add additional Hickory chunks as needed and smoke for 6 to 8 hours
