Ingredients

  • Canola oil cooking food spray
  • one medium brown onion, carefully chopped
  • 3cm piece raw ginger, peeled, finely grated
  • 1 tea spoon Thai red curry paste
  • 750g orange sweet potato, peeled, diced
  • 3/4 cup crimson lentils, rinsed
  • 3 cups Massel vegetable liquid share
  • 1 tea spoon lime juice
  • 1 tablespoon seafood sauce
  • two teaspoons brown glucose
  • Fresh coriander leaves, to provide

Technique

  • Step one Spray a huge, heavy-based saucepan along with oil. Heat more than medium-low heat. Add onion. Cook, stirring, for 5 moments or until softened. Add ginger and curry paste. Cook, stirring, for 1 minute or until fragrant.
  • Stage 2

    Add sweet potato, lentils, stock and 2 cups cold water. Bring to the boil. Reduce heat to low. Simmer, partially covered, for 15 to 20 moments or until potato and lentils are soft. Set aside with regard to 5 moments to cool. Process until smooth.

  • Stage 3 Return mixture to pan over low warmth. Add lime juice, fish sauce and sugar. Cook, stirring, with regard to 5 minutes or until heated through. Function topped with coriander.
