Recipes Sig’s Baked Herb Polenta with Onions and Cheese

  1. 1 cup low-fat milk (250ml)
  2. 1/2 cup vegetable stock (375ml)
  3. 1/2 cup water (375 ml)
  4. 1/2 cup polenta, (250g)
  5. 1/2 grated low fat Cheddar cheese
  6. 1 tsp each of chopped fresh parsley, chopped fresh oregano, chopped fresh thyme
  7. 1 small amount cooking oil spray
  8. 1 tbsp butter
  9. 1/4 cup water, extra
  10. 8 spring onions, chopped
  11. 2/3 cup grated low fat cheese, extra

Recipes Sig’s Baked Herb Polenta with Onions and Cheese

  1. Grease 20×30 cm lamington pan (loaftin), cover base and sides with baking paper. In a separate pan bring milk, stock and water to boil.

  2. Gradually add polenta, cook, stirring about 10 mins or until polenta is soft and thick, awesome for 1 minute. Stir in parmesan cheese and herbs. Spread mixture evenly in to prepared pan cover and refrigerate with regard to 2 hours or until firm.

  3. Turn polenta out, cut in to 8 pieces. Place polenta on stove tray which has been coated with oven oil spray. Combine extra water and butter in pan, add onions, cook. stirring until onions are soft and water has evaporated. Top polenta with onion micture and extra cheese. Bake in moderate oven about 15 minutes or until cheese has melted.
