Ingredients

  • 3 or more teaspoons cornflour
  • 5 tablespoons Homemade Chinese Stir-fry Marinade (see notes)
  • 400g fresh new chow mein noodles
  • 1/3 cup peanut oil
  • twenty-four medium natural prawns, peeled, deveined
  • 2 garlic cloves, crushed
  • one small dark brown onion, halved, sliced
  • 1 carrot, trim into 5cm lengths, thinly sliced lengthways
  • 410g may baby hammer toe spears, drained, halved
  • 1/2 bunch pak choy, quadrigeminal lengthways (see note)
  • Sliced green red onion, to provide

Method

  • Step 1

    Blend cornflour with two teaspoons water till smooth. Stir inside 2 cups drinking water and stir-fry marinade. Put aside.

  • Phase 2

    Preheat oven in order to 120C/100C fan-forced. Place a wire stand over the baking tray. Divide noodles into four equal portions. Using your own fingers, pass on each portion into the 25cm circular on separate plates.

  • Step 3

    Heat two tablespoons oil in the wok over medium-high heat. Swirl to coat. Carefully glide 1 noodle portion into the wok. Cook for 2 minutes or till golden and crisp underneath. Using the large spatula, carefully flip noodle wedding cake over. Cook for a further two minutes or until golden and sharp. Transfer to wire rack. Place within oven to keep warm. Repeat along with remaining noodles, adding a little additional oil if needed (see note).

  • Step four Heat one tablespoon from the remaining oil within wok over medium-high heat. Add prawns. Stir-fry for one to two a few minutes or until simply cooked through. Exchange to some bowl.
  • Step 5

    Heat staying oil within wok. Add garlic plus brown red onion. Stir-fry for 1 moment. Add carrot, corn and pak choy. Stir-fry to get 1 minute. Add spices mixture. Stir-fry for 1 minute thirty seconds or even until sauce boils plus thickens. Come back prawns to wok. Stir-fry for thirty seconds or until warmed through.

  • Phase 6 Location noodle cakes onto portion plates. Best with stir-fry. Serve along with green red onion.
