Recipes Chicken Caprese

  1. DREDGING MIX
  2. 1/4 cup all-purpose flour
  3. 1/4 cup Romano cheese, grated
  4. 1/2 tsp granulated garlic
  5. 1/4 tsp pepper and salt to flavor
  6. 1/2 tsp Italian spices blend
  7. 1/4 tsp crimson pepper flakes
  8. CHICKEN PLUS SAUCE
  9. 1 lb boneless skinless chicken breasts, cut in .25 slices
  10. 1 cup fresh new mozzarella balls, or thin sliced fresh new mozzarella cheese
  11. 1 cup fresh grape tomatos
  12. 1/4 cup low sodium chicken broth
  13. two tbsp Balsamic vinegar
  14. .25 cup cream, heavy or even light
  15. 2 tbsp cut fresh basil
  16. 1 tbsp chopped fresh chives
  17. 1 tbsp essential olive oil
  18. 1 tbsp butter, salted or unsalted

Recipes Chicken Caprese

  1. Whisk all dredging ingredients in a bowl to mix well

  2. Dredge chicken slices in mixture just to lightly coat and dry chicken

  3. Heat oil and butter in large skillet. Add prepared chicken slices and cook until golden on one side, about 2 minutes. Turn over

  4. Add mozzarella over chicken and scatter grape tomatos around pan. Cover and cook just until chicken is cooked through and cheese melts, about 3 to 4 minutes

  5. Remove chicken, tomatos and cheese to a serving platter. Tent with foil to keep warm while making sauce. Into skillet chicken was cooked in add chicken broth, scrape up any brown bits on pan while heating brth to a boil, cokl until just a couple of tablespoons are left. Add cream and balsamic vinegar and cook until its a sauce consistancy, about 3 minutes. Add basil and chives.

  6. Drizzle sauce over chicken, serve any remaining sauce on the side
