Ingredients

  • one tablespoon essential olive oil
  • 1 red onion, chopped
  • 750g pumpkin, peeled, cut
  • 4 mugs Massel chicken design liquid stock
  • 2 x 420g cans Heinz� Beanz Creationz� Mild Curry Beanz
  • 165ml can coconut milk products
  • Naan, in order to serve
  • Coriander sprigs, to provide

Technique

  • Step one Heat oil in the large saucepan on medium. Cook red onion for five minutes, until softened. Include pumpkin and stir to combine. Include stock and Beanz Creationz�. Bring in order to the over-heat high heat. Reduce high temperature to lower and simmer, covered, to get 10 short minutes, until pumpkin is sensitive.
  • Step 2

    Using the hand blender, blend soup till simple. Add coconut milk and mix in order to combine. Cook over low high temperature till warm through.

  • Step 3

    Serve in bowls lead with coriander and naan.
