Ingredients

  • four x 200g ocean trout or trout fillets
  • .25 cup (60ml) olive oil
  • 16 anchovy fillets, carefully sliced
  • one lemon, zested, juiced (1/4 cup)
  • 2 tablespoons carefully chopped chives
  • 1 celery heart (see box, above), cut diagonally into 1. 5cm-thick pieces
  • 2 witlof, halved lengthways
  • 1 nana smith apple, quartered, cored, thinly chopped up
  • 1/2 tsp dried chilli flakes

Technique

  • Step 1 Clean ocean trout with 1 tablespoon essential oil and period to taste with sodium and spice up.
  • Step 2

    Heat a large, heavy-based frying pan more than medium heat till very hot. Include ocean trout, skin-side down first, and cook for just two mins each side intended for medium-rare or till cooked to your own liking.

  • Action 3

    Place anchovies, lemon juice and staying oil within a bowl and beat to mix. Stir in chives. Location lemon rind, celery heart, witlof, apple and chilli flakes in a dish and throw to combine. Divide salad and sea trout among plates. Drizzle with dressing. Serve.
