Ingredients

  • 0.25 cup (50g) white long-grain rice
  • 1/3 cup (80ml) olive oil
  • 3 leeks (white part only), thinly sliced

  • 2 garlic cloves, crushed
  • 1/4 cup chopped mint
  • 2 tablespoons chopped dill
  • eight eggs, beaten
  • 150g marinated feta parmesan cheese, drained, crumbled
  • Sliced reddish onion, to serve
  • Tomato, to function

Method

  • Step 1 Preheat the oven to 180�C. Oil a 1-litre round ovenproof dish.
