Recipes Mom’s Shrimp Casserole

  1. shrimp casserole
  2. two cup precooked whitened or brown rice
  3. 1 cup chopped red bell pepper
  4. 1 cup chopped celery
  5. one cup chopped onion
  6. 1/3 cup butter
  7. 1 family size can cream associated with mushroom soup
  8. 8 ounce shredded swiss parmesan cheese, best to get from deli plus just slice and dice your self
  9. 8 oz fresh shredded cheddar cheese
  10. 1/2 tsp dark pepper
  11. 1 tsp salt
  12. 25 big cleaned, deveined end off fresh shrimp

Recipes Mom’s Shrimp Casserole

  1. In large pot over medium heat cook onions, celery and peppers in butter until tender. About 3-5 minutes.

  2. Remove vegetables and set aside. In same pan, cook shrimp until they turn pink and just a touch undercooked.

  3. In a large bowl combine cooked vegetables, creamed soup, rice, salt and pepper, swiss cheese and half of cheddar. Mix well.

  4. Place in a very lightly greased 9″ by 13″ baking tray.

  5. Now place shrimp throughput baking tray nestling into rice mixture making sure they are pushed down to be covered.

  6. Bake covered 30 minutes in a preheated 375°F oven. After 30 minutes remove cover, add the other half of cheese and bake uncovered for 5 minutes.

  7. Serve with wedges of fresh lemon.
