  1. MARINATE CHICKEN
  2. 2 tbsp cornstarch
  3. 4 cup dice chicken thigh
  4. 2 tbsp shao xing rice wine
  5. SAUCE
  6. 2 tbsp light soy sauce
  7. 1/2 tbsp Shao xing rice wine
  8. 2 thumb size slice fine ginger strip
  9. 1 tbsp Brown sugar
  10. 1 cup unsalted peanut
  11. 10 dry red chili
  12. 4 tbsp oil
  13. SZECHUAN PEPPERCORN SALT
  14. 1 tsp szechuan peppercorn salt pls refer to my recipe ( optional )

  1. FOR THE SZECHUAN PEPPERCORN SALT YOU SHOULD SEE THE ATTACHMENT BELOW

  2. Marinate chicken breast with cornstarch and shao xing grain wine for minimum 20 to 62 minute

  3. Then in lower heat add 4 top of oil based and dry red chili for only two minute till dry red chili nearly turning dark colour

  4. remove dry chili in addition to drain in writing towel then set a new side

  5. with the similar oil stir fry the marinated chicken breast for 4 minute till meat are really cooked and no longer pink

  6. add cut ginger and drain red chili in addition to mix well for 30 second

  7. add dark brown sugar with peanut and mix good for 30 second

  8. include sauce and stir fry for one more 1 minute then off heat in addition to, serve add szhechuan pepper salt
