Recipes Spinach Stuffed Artichokes

  1. 1 cup shredded cheddar cheese
  2. 1/2 cup italian bread crumbs
  3. 2 tbsp dried oregano
  4. 15 cherry tomatoes, thin sliced
  5. 2 tsp minced garlic
  6. 1 lb fresh, chopped baby spinach
  7. 1/2 onion, fine chopped
  8. 2 tbsp olive oil, divided
  9. 4 artichoke bottoms, rinsed n drained (precooked or marinated works great)
  10. 1/2 tbsp water

Recipes Spinach Stuffed Artichokes

  1. 1. In a skillet heat one tbl. olive oil add onion, sauté 5 minutes, or until translucent plus soft.
    Stir in spinach, drinking water and garlic, and cook 3~5 mins, or until the majority of liquid has evaporated. Remove from heat. stir in cheddar cheese. Season with salt and spice up. Cool 10 minutes, or until simple to handle.

    Preheat cooker to 350°F. Coat baking sheet along with cooking spray, and place artichoke feet on baking sheet. Fill each artichoke with spinach mixture and top along with cherry tomato slices. Sprinkle tomato capped artichokes with salt, pepper, and oregano, then with breadcrumbs. Drizzle with staying olive oil.
    Bake twenty five to 30 minutes, or until breadcrumbs are browned and crispy.
