  1. 480 ml full fat coconut milk
  2. 60 grams icing / powdered sugar
  3. 80 grams granulated sugar
  4. 1 tsp vanilla extract
  5. 1 tsp xanthan gum

  1. Combine all ingredients (mix the xanthan with a little of the dairy before adding) and churn in a good ice cream maker for 15-30 minutes, then freeze to set for a few hours

  2. This makes a gelato/sorbet consistency. For extra creaminess add a pureed avocado and replace half the milk with coconut cream. Makes a litre of ice cream

  3. Exchange the draw out to change up the flavours. Attempt adding strawberry instead with some chopped strawberries, mint extract and chocolate potato chips, rum extract with raisins etc
