  1. 3/4 kilogram anglerfish in fillets
  2. seventy five ml olive oil
  3. six cloves garlic
  4. 1 tbsp chopped fresh parsley
  5. a single tsp paprika
  6. 1/4 teaspoon saffron
  7. 1 tsp oregano
  8. 2 tbsp white wine vinegar
  9. sodium and pepper

  1. Heat the olive oil in the frying pan and add the entire garlic cloves -remove when golden

  2. Cut the fish into items and add to the oil plus sauté over a high heat

  3. Crush the garlic in the mortar and mix using the parsley, paprika, saffron, oregano, vinegar and salt plus pepper and add to the fish in the frying pan

  4. Cover the frying pan and make till the fish flakes easily (about fifteen mins) – add more water in case necessary

  5. Garnish with the sprig of parsley and serve instantly
