Recipes Sig’s Zucchini and refried Bean fritters with Yogurt Dip

  1. 5 big Zucchini, grated
  2. 1 moderate white or yellow red onion
  3. 1 can, small refried beans
  4. 0.5 cup (75 g) plain flour
  5. 3 eggs
  6. one tbsp every off chopped fresh oregano, chopped fresh basil and chopped fresh parsley
  7. 1 pinch salt and spice up to taste
  8. 1 little bit of oil for frying
  9. 1 yogurt dip as comes after
  10. 3/4 mug (180 ml) plain Greek yogurt (thick set yogurt)
  11. 1 little cucumber, seeded, grated and drained
  12. one large clove garlic, crushed
  13. 1 tbsp fresh, chopped or 0.5 tablespoon dried mint
  14. 2 tbsp lemon juice

  1. Combine zucchini, onion, flour, eggs, natural herbs, beans, salt and pepper to flavor in bowl.

  2. Shallow-fry by making flat little cakes (similar to potato cakes) in hot oil until lightly browned beneath. Turn fritter cook until well browned on other side. Take out of pan and drain.

  3. Yogurt Dip, mix all ingredients in a mixing bowl until well combined.

  4. Serve tzatziki with fritters.

  5. Makes 16 small fritters
